urm, if you have the audacity project files (saved as a data folder and also as a seperate icon that opens in audacity), then you can simple just record over the top :)

when you've recorded one guitar part, as you have done, you can click anywhere on the first guitar part (ie, the beggining, the middle, the end etc.) and when you click 'play', it will resume from where the marker is.
now, to record over the top, simply open the first guitar part (that awesome riff you had) with audacity, set the place you want to play/record from, and just record over it :)
